Marchese Antinori The wine Cervaro della Sala is an I.G.T. produced in Umbria from chardonnay and grechetto grapes from vines approximately twenty years old grown in a hilly area between two hundred and four hundred meters of altitude. Aged in oak barrels for five months and subsequently for another ten months in the bottle inside the cellars of the Castello della Sala, owned by the Antinori family.

A wine that presents itself crystal clear with a lovely vivid and consistent golden yellow color in the glass, with arches close together and slow lacrimation.

On the nose it is intense, with a complex bouquet of fine quality.

The fruity and floral aromas are immediately perceived, followed by spicy notes.
We easily recognize notes of ripe fruit, including tropical, among which pineapple and banana, then peach and a citrus note similar to grapefruit, followed by broom blossoms, acacia flowers and hawthorn, elegantly bound together by sweet spice aromas imparted by fermentation and the wood, which contribute these nuances of toasted hazelnuts, white pepper and vanilla.

On the palate it enters dry, warm and soft with good freshness and acidity, it has good structure, intensity and persistence.
It is the perfect marriage between elegance and harmony, where everything finds confirmation in these full and rounded flavors, in its body, its harmony and balance, and in its almost endless persistence; the finish confirms its fruity sapidity.

A wine I recommend pairing with classic fish antipasti, boiled fish starters, seafood risottos but also with porcini mushrooms.
