Il Bianco d'Alessano is a white-berried grape variety of unknown origin, though many consider it native to the Valle d'Itria; also known by the names Achiappapalmento, Bianco di Lessano, and Verdurino.
It is a grape variety once very widespread that has currently lost cultivated acreage due to its low yield; in favor of the other widely grown white variety: Verdeca.
Now almost entirely disappeared even in the area of Martina Franca, it is mostly vinified together with other grape varieties. The vine presents large, orbicular leaves, medium-to-large clusters of conical shape tending toward cylindrical and very compact; the berries are quite large and spherical with very thick skin.
These are vines resistant to disease, but sensitive to frost.
A "late-ripening" variety in both budbreak and maturation, straddling September and October.
The Cupa from the winery "I Pastini" is a Bianco d'Alessano vinified in purity; aged five months in steel and one month in bottle.
The color is a pale but luminous straw yellow with greenish reflections.
On the nose one clearly detects white fruit, wisteria, almond, the scent of hay, and a spicy touch.
It is a very acidic and mineral white, balanced, delicate, and complex; the dry taste and long persistence are noteworthy, making it an incisive wine that is difficult to forget.
In my opinion it would lend itself well to aging for 4–5 years.
Well suited to pairings with light antipasti, soups, fresh pasta, and dishes based on fish and white meats.
