Vetere: a Fascinating Organic Rosé Wine

We have already written about the San Salvatore estate when reviewing the excellent Jungano, which had impressed us with its quality.
Having visited the wine shop some time ago, I had been captivated by the delicate and elegant color of Vetere, another product from Peppino Pagano's cantina.
I held off on buying it for a while, given the full wine rack!
But that day I couldn't resist – that fish-based menu and the sweltering heat of that morning freed me from all inhibition and I decided to buy it.
This is a biological aglianico born from the lands of Salerno, and it is not the result – as is often the case – of the forced use of wine simply to round out a rosé range.

Trained using the guyot system and worked almost entirely by hand, it is vinified with ultra-soft pressing and aged in steel.
Chilled and brought to its ideal temperature, it was perfect for a Sunday lunch.
That Sunday, the table featured stoccafisso olive e capperi with a light sauce of fresh tomatoes.
The appetite was there, but the desire to start the meal was amplified by the impatience to taste a wine with such an attractive color!

Finally, it's ready!
I pour the wine into the glass – a perfectly clear and brilliant pink color, truly seductive, so much so that two near-teetotalers at the table are won over by what's in the glass and begin drinking it with pleasure!
An intense aroma gathering the scents of spring: grass, freshly bloomed flowers, almost-ripe fresh fruit, and minerality… another extract of charm!
With eyes closed I picture vast stretches of green meadows interspersed with patches of yellow flowers.
On the palate it is dry, mineral, savory, very fresh, and eminently drinkable – perfectly suited to the summer climate.
Good acidity and a few barely perceptible, very gentle caresses of fine tannins at the center of the tongue.

A cheerful wine, better than I expected; congratulations once again to San Salvatore, an estate that produces ethically and enhances the territory with outstanding products.
The quality-to-price ratio is fantastic – just 10 euros and you bring home something truly unique.
I believe I will stock up on this wine, which is certainly among the best rosés my palate has ever encountered.
