The wine I'm about to tell you about was purchased online, trying out Wineverse and taking advantage of Groupalia coupons… too bad the e-commerce site went offline keeping only the blog active (on which the last article is dated July 2015!)…
Major investments, newspapers singing the praises of this start-up, and in the end the sound of a thud…
Let's get to the wine, produced by Travaglini, a Piedmontese winery famous for its Gattinara, whose romantic name is "Il Sogno".
How a dream is born
Il Sogno is a wine born from overripe nebbiolo grapes, trained using the simple Guyot system at around 400 meters above sea level, right there in Gattinara; where the soil is saline and ferrous, red as if it were a clay court at Roland Garros!
The grapes are harvested in the first ten days of October; they remain to dry for over three months on drying racks; then one month in steel, forty in twenty-hectoliter oak barrels, and another eight months in the bottle… it must truly be worth tasting!
Sometimes, dreams come true
Deep garnet in color, it arrives forcefully on the nose.
Balsamic notes are present, as well as mineral ones, accompanied by the inevitable aromas of ripe red fruits. It is also possible to detect chocolate, pepper, and leather.
Once it has taken hold of the nose, it begins to tease the curiosity of the palate.
In the mouth an important yet elegant structure, which, despite the significant alcohol content (around 15% vol.), knows how to enchant without resorting to force.
It is soft, enveloping, with a "slender" tannin; damnably persistent…
It is a dream for the taster…
The pairing and... the bottle
I recommend pairing it with very aged cheeses and red meats, and serving it at around 18 degrees.
It is also necessary to spend a few words on the magnificent bottle, almost a design object, which expresses the essence of the product: refined, sinuous, yet at the same time firm and resilient; after all, "A great wine could certainly not end up in an ordinary bottle!".
In the end, Wineverse did sell something good! A wine that cannot be missing from your collection.
